Five Fresh and Vibrant Recipes to Mark the Start of Spring
Spring is all about fresh beginnings, so it’s the perfect time to explore new flavours and recipes that reflect the vibrancy of the new season.
To celebrate warmer weather and brighter days, we’ve collated five colourful recipes to enjoy all through spring.
Each recipe is made using pure Canadian maple syrup, adding a splash of natural sweetness to your spring eating!
Noodle salad with a maple-Asian dressing
Looking for a simple recipe that can be enjoyed again and again throughout the spring? This vegan-friendly noodle salad is easy to make and super nutritious.
Shaved asparagus is paired with egg noodles, roasted peanuts, red chilli and chopped coriander, all brought together by the maple-infused dressing.
As the noodles boil, you can prepare the dressing by mixing sesame oil, soy sauce and rice vinegar with pure maple syrup.
The subtle sweetness of the maple syrup complements the savoury notes of the other ingredients, with the flavour further enhanced by the spicy chilli and peppery coriander.
The best thing about this noodle salad is that it can be made in less than 30 minutes, providing you with a healthy and delicious meal even when you’re in a rush.
Spicy jerk chicken burger with maple slaw
Fancy cranking up the heat a few more notches? These tasty jerk chicken burgers are an excellent option for those who like it a bit spicier.
The sweet and spicy marinade is made by mixing jerk seasoning with coconut cream, green chilli, lime juice, garlic and ginger.
Once the chicken thighs have been coated in the jerk marinade and topped with maple syrup, they can be cooked either in the oven or on the grill.
The recipe also features its own maple-flavoured slaw, made with yoghurt, apple, carrots and cabbage.
Juicy, vibrant and full of bold flavours, these jerk chicken burgers have everything you could want from a spring meal.
Maple kombucha
With the weather getting warmer, it’s important to cool off and stay hydrated by drinking plenty of fluids.
If you’re looking for a refreshing beverage with additional health benefits, kombucha – a fermented drink made from sweetened tea – is a great option.
Our kombucha recipe uses Canadian maple syrup to sweeten the drink, which is then left for a week to ferment.
In this time, healthy bacteria begin to form within the liquid, resulting in a unique flavour that is best described as sour but also fruity.
Once the kombucha has fermented, we recommend garnishing the drink with mint, grapefruit and strawberries.
Mediterranean seared barramundi with maple dressing
Another quick and easy dish that’s packed with nutrients, this pan-fried barramundi is perfect for adding to your rotation of simple spring meals.
The dressing is made by sweating garlic and shallots in a pan, before adding chopped capsicums, pure maple syrup and a drizzle of lemon juice.
In a separate pan, the barramundi fillets are then seared for a few minutes on each side to create a crispy texture.
A generous serving of spinach is added while the barramundi cooks, with the dressing mixed in ahead of serving.
The flaky fillets do a great job of absorbing the sweet and citric notes from the dressing, forming a well-rounded and sophisticated flavour profile.
Maple-caramelised tempeh fajitas with spicy guacamole
Looking for another vibrant and flavoursome dish to inspire your spring eating? These vegan fajitas, made with tempeh and an assortment of veggies, are a delight!
Small strips of protein-rich tempeh are caramelised in a sweet and spicy sauce including chilli powder and pure maple syrup.
Chopped onions and capsicums are then added to the pan for extra flavour and crunch.
While the ingredients are frying, you can prepare the homemade guacamole by mixing mashed avocados with salsa and lime juice.
Together with fresh coriander, the spicy avocado provides the perfect topping for these fiery tempeh fajitas.
