Ultimate maple seafood platter
For seafood fans, it doesn’t get much better than this jumbo-sized seafood platter! Complete with all the trimmings, this dish is a worthy contender for your Christmas dinner centrepiece.
Fresh oysters, juicy prawns, glazed lobster and smoked salmon form a decadent mix that’s a feast for both the eyes and the palate.
Maple syrup is used to add a rich flavour to the lobster glaze, while also serving as the base for both our mustard and maple cocktail dipping sauces.
It’s a wonderful medley of flavours, with the maple dipping sauces perfectly complementing the natural sweetness of the seafood.
Spiced sticky maple glazed ham
A Christmas classic in every sense of the phrase, maple-glazed ham is a tried-and-tested dish that can be trusted to deliver maximum flavour.
The sweet and subtly spiced glaze consists of a delicate blend of maple syrup, maple sugar, mustard, orange juice, cinnamon, ginger and nutmeg.
After removing the rind, the ham is gently scored in horizontal and vertical lines, with these incisions allowing the flavour of the glaze to seep deep into the meat.
The beauty of this dish is that it can easily be prepped ahead of time and left to sit in the fridge, ready for baking on the big day.
Oven-roasted wombok with maple crispy chilli oil
Switch up your regular serving of sides for Christmas dinner with this sweet and spicy roasted wombok, complete with its own crispy chilli oil dressing.
The prep for the wombok is very simple – all you need to do is cut the cabbage into quarters, remove the outer leaves and then drizzle with olive oil and maple syrup on a baking tray.
The chilli oil can be prepared the day before, with this sweet, spicy and sticky sauce being the perfect dipping sauce for other festive treats.
Maple rum balls
Another festive favourite, rum balls are great for gifting and surprisingly simple to make, requiring only a handful of simple ingredients that you’re likely to have in your pantry cupboard.
The first step of our rum balls recipe involves blending biscuits to the granularity of fine crumbs, before mixing this with the remaining ingredients.
The mixture is left to sit for an hour or so in the fridge, at which point it will be ready to roll out into balls about an inch in size.
If you want these rum balls to be family-friendly, simply leave out the rum – or add more for a boozy cocktail party snack!
Maple, lemon, lime and bitters
You’re obviously going to need something to wash down all that food – and what could be better than a refreshing jug of lemon, lime and bitters?
Our lemon, lime and bitters recipe puts a Canadian twist on this classic Aussie tipple, with a splash of maple syrup being used to sweeten the cocktail.
The result is a more easy-drinking version of the original. It’s fresh, citrusy and the maple syrup cuts through the bitters perfectly for the ultimate summer cocktail.
