Oven-roasted wombok with maple crispy chilli oil

Looking for a healthy side dish that you can combine with all your favourite meals? This roasted wombok is simple, delicious and nutritious! 

The wombok wedges are drizzled with olive oil and pure maple syrup before roasting and caramelising to create a rich flavour. 

The recipe also includes its own crispy chilli oil, which is infused with maple syrup for the perfect blend of sweet and spicy.

 

Maple vegan pancakes

Who says vegans can’t enjoy fluffy, American-style pancakes? These vegan pancakes taste every bit as good as their dairy-based counterparts. 

Chickpea flour is mixed with baking powder, maple syrup and oat milk to form a sweet and richly flavoured batter. 

The pancakes only take a few minutes to cook, making the dish a great option for busy mornings and lazy weekends.

 

Vegan maple mac and cheese

Creamy, comforting and indulgent, this vegan mac and cheese has all the hallmarks of a classic mac and cheese but is made with only dairy-free ingredients. 

The cheese sauce consists of soya or oat milk, dairy-free margarine and vegan cheese, with the addition of maple syrup lending a subtle sweetness to the dish. 

Natural breadcrumbs are sprinkled over the top, and these become crispy in the oven, adding extra depth to the dish’s texture.

Vegan Thai green curry

Soothing for the soul and surprisingly simple to make, this vegan Thai green curry Is great for adding some variation to your regular rotation of meals. 

The subtly sweet curry consists of sweet potatoes, roasted asparagus and cashew nuts in a fragrant green curry sauce flavoured with lime, maple sugar and coconut milk. 

The recipe comes together in roughly 30 minutes and can be easily adapted to include mushrooms, aubergine or any other veggies you have at your disposal.

Maple vegan iced coffee

Kickstart your day with this energising vegan iced coffee, naturally sweetened with vanilla extract and a splash of maple syrup. 

Maple’s woody, caramel-like taste blends beautifully with the espresso’s rich and nutty flavour. 

The recipe requires just five simple ingredients and, while we used soya, it can be made with your preferred choice of plant-based milk. 

You can also add an extra shot of espresso if you’re looking to up your dose of caffeine.
