Maple Viral Dubai Chocolate Brownie

Ingredients

For the brownies

  • 7 oz Unsalted butter
  • 7 oz Milk chocolate
  • 1.5 tsp Vanilla extract
  • 1 tsp Salt
  • ¾ cup + 1 tbsp Amber maple syrup
  • ¾ cup Maple sugar
  • 5 Eggs
  • 1 ¼ cups Flour
  • ¾ cup Cocoa powder

For the filling

  • 1 tbsp Unsalted butter
  • 3/5 cup Kataifi
  • 1/2 cup Pistachio butter
  • 2 tbsp Tahini 
  • A pinch Salt

For the topping

  • 6 oz Dark chocolate
  • 1 tbsp Coconut oil
  • ⅓ cup Chopped pistachios
  • 1 tbsp Flaky salt

Method

Prep the brownies

  1. Preheat the oven to 175ºC. Grease a 12×9 inch rectangular baking dish then line with baking parchment.
  2. Melt the butter in a microwave. In a large bowl, pour the melted butter, and then add dark chocolate, vanilla extract, and salt. Stir well until combined.
  3. Pour the maple sugar and maple syrup into the chocolate mixture and whisk together. Add the eggs one at a time, mixing each one until well incorporated.
  4. Add the flour and cocoa powder then fold until incorporated. Transfer the batter to the prepared baking dish and transfer it to the oven.
  5. Bake for 22-25 minutes or until a knife comes out clean when inserted in the centre. Allow the brownies to cool completely before removing them from the pan.

Prep the kataifi filling

  1. In a large pan over medium heat, melt butter then add in the chopped kataifi.
  2. Cook until it becomes a golden-brown colour, it should take about 15 minutes.
  3. Transfer the kataifi to a bowl and combine with the pistachio butter, tahini, and a pinch of salt.

Assembly

  1. With a spatula, spread the kataifi mix in an even layer over the brownies.
  2. Melt the chocolate with the coconut oil then pour on top of the kataifi layer.
  3. Sprinkle with chopped pistachios and flaky salt before the chocolate sets.
  4. Slice and serve.
