Maple Lamb San Choy Bow

Ingredients

  • 1 cup lamb mince
  • ½ brown onion, chopped
  • 1 tsp ground cumin 
  • 1 tsp ground coriander
  • ½ tsp chilli flakes
  • 3 tbsp pine nuts 
  • 3 tbsp pure maple syrup (preferably dark syrup for its robust taste)
  • ½ tsp salt
  • 2 tbsp sesame oil
  • Handful of fresh coriander leaves, chopped
  • 2 spring onions, sliced  
  • 12 cos lettuce leaves 
  • 1 red chilli, sliced
  • 1 green chilli, sliced
  • 1 tbsp sesame seeds, toasted

Method

  1. In a large bowl, add the lamb, onion, cumin, coriander, chilli flakes, pine nuts, maple syrup and salt. Mix everything together well.
  2. Pour the sesame oil into a hot pan, add the lamb mixture and cook on high heat for 7–10 minutes or until brown, stirring continuously.
  3. Take the lamb off the heat and mix in half of the spring onion and coriander.
  4. To serve, spoon the lamb mixture into the lettuce leaves and top with the chilli, sesame seeds and rest of the spring onion and coriander.

Cooked in hot sesame oil until perfectly browned, the lamb is then tossed with fresh coriander and spring onions. With all your ingredients ready, the lamb san choy bow is assembled by spreading the lamb mixture over crisp cos lettuce leaves and garnishing with chilli, spring onion and toasted sesame seeds. Packed with sweet, spicy and savoury flavours, each bite of these lamb lettuce cups is sure to delight.
