Dirty Fries with Maple Sriracha Mayo

For the dirty fries:

  • 1 bag french fries
  • ¾ cup cheddar
  • 1 tbsp + 1 tsp jalapeños, chopped
  • 1 tbsp fresh coriander, chopped

For the maple sriracha mayo:

  • 3 tbsp sriracha sauce
  • ½ cup mayonnaise
  • 2 tbsp + 1 tsp pure maple syrup (preferably amber syrup for its rich taste)


  1. Add the maple sriracha mayo ingredients to a bowl and combine thoroughly.
  2. Place the french fries in a single layer on a baking sheet then bake for 20–25 minutes or until golden and crispy.
  3. Put the fries onto 4 plates or into takeaway boxes then add the cheddar, maple sriracha mayo, jalapeños and coriander.
  4. Serve immediately.
