Maple and Peanut Butter Protein Balls

Ingredients
- 1 cup rolled oat flakes
- ¾ cup smooth peanut butter
- 3 oz whole milk
- 2 tbsp vanilla protein powder
- 4 tbsp pistachio nibs
- 2 tbsp ground flaxseeds
- 6 tbsp pure maple syrup (preferably amber syrup for its rich taste)
- 1 tsp vanilla extract
- 1 pinch of cinnamon
- 4 tbsp ground pistachio
Method
- In a large bowl or a food processor, combine the peanut butter, maple syrup, vanilla extract, protein powder, milk, ground flaxseeds, oats and cinnamon.
- Pulse or mix until well combined.
- Add the pistachio nibs and mix a few more times.
- Using damp hands, roll into 20 balls (about 30g each) then roll them into the ground pistachio.
- Chill for 30 minutes until firm then serve.
