Maple and Peanut Butter Protein Balls

Ingredients

  • 1 cup rolled oat flakes
  • ¾ cup smooth peanut butter
  • 3 oz whole milk
  • 2 tbsp vanilla protein powder
  • 4 tbsp pistachio nibs
  • 2 tbsp ground flaxseeds
  • 6 tbsp pure maple syrup (preferably amber syrup for its rich taste)
  • 1 tsp vanilla extract
  • 1 pinch of cinnamon
  • 4 tbsp ground pistachio

Method

  1. In a large bowl or a food processor, combine the peanut butter, maple syrup, vanilla extract, protein powder, milk, ground flaxseeds, oats and cinnamon.
  2. Pulse or mix until well combined.
  3. Add the pistachio nibs and mix a few more times.
  4. Using damp hands, roll into 20 balls (about 30g each) then roll them into the ground pistachio.
  5. Chill for 30 minutes until firm then serve.
