Maple-Turmeric Orzo and Chicken Salad

Looking for a fresh, vibrant dish that’s both nourishing and quick to make? This maple-infused orzo chicken salad is a delicious, nutrient-packed option.

Light and versatile, orzo serves as a delicious and filling base and is combined with leftover chicken, fresh spinach, capsicum and parsley.

What really makes the salad is the vinaigrette – composed of olive oil, lemon juice, turmeric and maple syrup – which adds sweetness and a light tang to the dish.

Served warm or chilled, the orzo chicken salad is a fantastic option for lunches or quick and easy weeknight dinners.

Enjoy a larger portion as a standalone main or pair it with some crusty bread for a nourishing meal.

Pan-Fried Maple Salmon

For an easy weeknight dish that’s healthy and delicious, look no further than our maple-glazed salmon.

The sweet and sticky maple glaze is made with fresh ginger and garlic, soy sauce, sesame oil and pure maple syrup, with red chilli also adding a hit of spice to the mix.

After marinating the salmon in the maple glaze, the fillets are pan-fried on high heat until crispy along with pak choi and red onions.

The slight caramelisation of the glaze gives the salmon a glossy finish while the pak choi adds a refreshing, spring-like crunch.

Serve with a squeeze of lime for a zesty kick and garnish with fresh coriander for a tasty meal that comes together in 30 minutes.

Roasted Red Capsicum, Stuffed with Broccoli and Maple Tabbouleh

Stuffed capsicum dish offers a unique blend of colours, flavours and textures that’s ideal for spring.

Our vegetarian stuffed capsicum recipe opts for a broccoli and maple tabbouleh filling made with bulgur wheat, pan-fried broccoli, lemon juice, fresh parsley and maple syrup.

The light crunch of the broccoli perfectly complements the fluffy texture of the bulgur wheat and juicy roasted capsicum.

Enjoy this dish as a light supper or serve it as a side alongside your favourite spring mains for a wholesome meal.
