Traybake Pancakes with Maple Glaze

Ingredients

  • 2 cup self-raising flour
  • 1 tsp baking powder
  • Pinch of salt
  • 1/3 cup pure maple syrup (preferably amber syrup for its rich taste)
  • 2 large eggs
  • 3 cups buttermilk
  • 1/3 cup whole milk
  • 4 tbsp melted butter
  • 1 tsp vanilla extract
  • 1 tsp soft butter, for greasing
  • 1 1/4 cup mixed berries
  • 1/8 cup pure maple syrup (preferably amber syrup for its rich taste), for glazing

Method

  1. Preheat oven to 180°C.
  2. Grease a large cooking tray with soft butter.
  3. In a bowl, mix the self-raising flour, baking powder and salt then whisk.
  4. In a separate bowl, whisk the eggs, maple syrup, buttermilk, vanilla extract and melted butter.
  5. Add the dry ingredients to the wet and fold until combined.
  6. Scrape pancake mixture onto your prepared cooking tray.
  7. Spread evenly with a spatula then add the berries on top.
  8. Bake for about 15 minutes or until light brown.
  9. Glaze with maple syrup then serve warm.

Perfectly cooked traybake pancakes are made from buttermilk, butter, eggs, vanilla extract and mixed berries for a mouth-watering delight.

Gather the self-raising flour, baking powder, and salt and whisk together the ingredients before mixing the remaining eggs, maple syrup, buttermilk, vanilla extract and melted butter in another bowl. Mix the wet and folded ingredients together and spread onto a cooking tray before sprinkling your choice of mixed berries on top for a delightful crunch.
