Roast Chook and Maple Caesar Salad

Ingredients

For the Caesar dressing:

  • ¼ cup mayonnaise 
  • ¼ cup buttermilk
  • 3 tbsp pure maple syrup (preferably amber syrup for its rich taste)
  • 3 tbsp Parmesan cheese, grated
  • 1 garlic clove, grated
  • ½ tsp ground cayenne pepper 
  • Squeeze of fresh lemon juice
  • 2 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • Salt and black pepper, to taste

For the salad:

  • 1 fresh roast chook
  • 2 Romaine lettuces
  • 1 cup croutons
  • 3 tbsp Parmesan cheese, grated

Method

  1. Add all the dressing ingredients to a bowl and whisk until combined.
  2. Use your hands to take the roast chook off the bones and shred.
  3. Place the lettuce, croutons, half the parmesan, chook and dressing into a large bowl and toss to combine.
  4. Top with the remaining parmesan and serve.
