Ingredients
- 14 oz chicken breast tenders (or cut breast into 6 strips)
- 1½ cups corn flakes, crushed
- 2 eggs
- ½ cup flour
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
- salt + cracked black pepper, to taste
- olive oil spray
- ½ cup pure Canadian maple syrup
- 1 tsp chili flakes (adjust to taste)
- 1 tsp parsley, chopped (optional)
Method
- In a small bowl, mix garlic powder, onion powder, smoked paprika, salt, and pepper.
- Add half the spice mix to the flour and stir to combine.
- Place the corn flakes in a snap-lock bag, add the remaining half of the spice mix, seal the bag, and crush with a rolling pin until fine but still a little chunky for crunch.
- Crack the eggs into a shallow bowl with 1 tsp Pure Canadian maple syrup and whisk until smooth.
- Working one tender at a time, coat the chicken in the seasoned flour, dip into the egg wash, then press into the crushed corn flakes, making sure each piece is fully coated.
- Arrange tenders on the tray or air fryer basket and spray lightly with olive oil.
- Bake for 10 mins (or air fry 8 mins), until golden and crispy.
- While cooking, heat the maple syrup and chilli flakes in a small pan for 1–2 mins until slightly sticky.
- Brush or drizzle the glaze over the hot tenders.
- Top with parsley and enjoy!
