Piña Colada Maple Mocktail

Ingredients
- ⅘ cup coconut cream
- 1 fresh pineapple, cut into chunks
- 1 ⅗ cups pineapple juice
- 4 tbsp + 2 tsp pure maple syrup (preferably amber syrup for its rich taste)
Method
- Add the pineapple chunks, pineapple juice, maple syrup and coconut cream to a blender and blitz until smooth. This should take approximately 1 minute on high speed.
- Pour into a tall glass and serve immediately with a wedge of pineapple.
