Eats by Ella’s Maple Rocky Road

Ingredients

  • 3tbsp pure maple syrup (preferably dark syrup for its robust taste)
  • 2½oz or 1½ cups mini vegan marshmallows
  • 8½oz or 2½ cups digestive or rich tea biscuits
  • 10½oz vegan chocolate
  • 1¾oz or ⅓ cup chopped peanuts or pretzels
  • 4oz or ½ cup (1 stick) vegan butter or margarine

Method

  1. Line an 8×8” brownie tin with parchment paper.
  2. Crush up the biscuits into large pieces then set aside.
  3. Melt the chocolate, maple syrup and vegan butter or margarine on low heat until smooth.
  4. Transfer to a large bowl.
  5. Add the crushed biscuits to the melted chocolate mixture, along with the peanuts or pretzels and marshmallows.
  6. Mix well until coated in chocolate, then add the mixture to the tin.
  7. Push and flatten with a metal spoon or spatula.
  8. Refrigerate or ideally leave to set at room temperature for 3 hours at least.
  9. Slice, serve and enjoy!
