Ingredients
- 3tbsp pure maple syrup (preferably dark syrup for its robust taste)
- 2½oz or 1½ cups mini vegan marshmallows
- 8½oz or 2½ cups digestive or rich tea biscuits
- 10½oz vegan chocolate
- 1¾oz or ⅓ cup chopped peanuts or pretzels
- 4oz or ½ cup (1 stick) vegan butter or margarine
Method
- Line an 8×8” brownie tin with parchment paper.
- Crush up the biscuits into large pieces then set aside.
- Melt the chocolate, maple syrup and vegan butter or margarine on low heat until smooth.
- Transfer to a large bowl.
- Add the crushed biscuits to the melted chocolate mixture, along with the peanuts or pretzels and marshmallows.
- Mix well until coated in chocolate, then add the mixture to the tin.
- Push and flatten with a metal spoon or spatula.
- Refrigerate or ideally leave to set at room temperature for 3 hours at least.
- Slice, serve and enjoy!
