Maple Glazed Roasted Chickpeas with Paprika and Sea Salt

Ingredients

  • 1 tin chickpeas
  • 1 tbsp sesame oil
  • ½ tsp smoked paprika
  • ½ tsp sea salt
  • 1 pinch freshly ground pepper
  • 4 tbsp maple syrup
  • ½ tsp onion powder
  • 1 pinch chilli flakes
  • 1tbsp lemon juice
  • 1 tbsp chopped coriander
  • 1 tsp sesame seeds
  • 1 rosemary sprig for garnish

Method

  1. In a bowl, mix the maple syrup with sesame oil, smoked paprika, onion powder, sea salt, ground pepper, chilli flakes and lemon juice.
  2. Drain and rinse the chickpeas in a sieve.
  3. Add the chickpeas in the maple syrup mix then stir gently.
  4. Put the chickpeas in a baking dish.
  5. Place the dish in the oven for 20 minutes at 180°C, removing and shaking halfway through.
  6. Chickpeas should be crispy on the outside and slightly soft on the inside. Continue cooking, if necessary, until ready.
  7. Put the chickpeas into a side plate.
  8. Drizzle with more maple, sprinkle the sesame seeds and coriander.
  9. Garnish with rosemary.
