Maple Butter Mochi

Ingredients
- 3 mochi rice cakes (approximately 150g)
- 2 tbsp + 1 tsp pure maple syrup (preferably amber syrup for its rich taste)
- ⅓ oz butter, salted
- 1 egg yolk
- 2 tbsp + 2 tsp potato starch
Method
- Place the mochi rice cakes and maple syrup in a heatproof container, covering with cling wrap, and microwave on 600W for 2 ½ minutes.
- Add the butter and egg yolk to the rice cake and maple syrup mixture and mix quickly with a spoon so that the mixture is evenly distributed.
- When all the ingredients are mixed and the white part of the rice cake is no longer visible, add 5g / 1 tsp of potato starch and mix further.
- Dust a chopping board with the remaining potato starch and then place the rice cakes on the chopping board, coating each surface with the potato starch.
- Transfer the rice cakes to a square container and flatten to shape into regular sizes.
- Once the rice cakes have cooled and are firm, cut into small cubes ready for serving.
- Serve with a final dusting of potato starch and a drizzle of maple syrup.
