Maple Banana Bread

Ingredients

  • 2 cups very ripe bananas, peeled
  • 2 tsp vanilla extract
  • 1 tbsp + 2 tsp pure maple syrup (preferably dark syrup for its robust taste)
  • ⅖ cup vegetable oil
  • 2 eggs
  • ⅖ cup maple sugar
  • 1 ½ cups plain flour
  • ½ tsp bicarbonate of soda
  • 1 tsp baking powder

Method

  1. Preheat oven to 160°C / Gas Mark 3 and line a loaf tin with baking parchment.
  2. In a mixing bowl, mash together bananas, vanilla, maple syrup and vegetable oil.
  3. Slowly add eggs, one by one, followed by maple sugar, flour, bicarbonate of soda and baking powder and mix together.
  4. Pour contents into the tin and bake for 50 – 60 minutes or until a skewer comes out clean.
  5. Leave to cool on a wire rack and serve when cooled.
