Hot Cross Maple Waffle

Ingredients
For the batter
- 1 1/2 cups plain flour
- 2 tsp baking powder
- 1 tsp salt
- 1 tsp cinnamon
- 1 tsp mixed spices
- 3 tbsp pure maple syrup (preferably golden colour for its delicate flavour)
- 2 eggs
- 1 1/4 cups warm milk
- 1 tsp vanilla extract
- Zest of 1 orange
- Zest 1/2 lemon
- 70g unsalted butter
For the topping
- Sultanas
- Yoghurt
- Pure maple syrup
- Selection of nuts
- Fresh fruit of your choice
Method
- In a large mixing bowl, stir together the plain flour, baking powder, salt, cinnamon and mixed spices.
- In a jug, whisk together the maple syrup, eggs, milk, vanilla extract, orange zest and lemon zest.
- Pour the milk mixture into the flour mixture and whisk until a smooth batter forms, then slowly whisk in the melted butter.
- Transfer the batter back into the jug and pour some of it into your pre-heated waffle maker. Once the waffles are cooked, transfer to a cooling rack and repeat with the rest of the batter until it’s all used up.
- Top your waffles to taste with your favourite fresh fruit, sultanas, yoghurt, maple syrup and nuts.
