Ingredients

For the batter

  • 1 1/2 cups plain flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1 tsp mixed spices
  • 3 tbsp pure maple syrup (preferably golden colour for its delicate flavour) 
  • 2 eggs
  • 1 1/4 cups warm milk
  • 1 tsp vanilla extract
  • Zest of 1 orange
  • Zest 1/2 lemon
  • 70g unsalted butter

For the topping

  • Sultanas
  • Yoghurt
  • Pure maple syrup
  • Selection of nuts
  • Fresh fruit of your choice

Method

  1. In a large mixing bowl, stir together the plain flour, baking powder, salt, cinnamon and mixed spices.  
  2. In a jug, whisk together the maple syrup, eggs, milk, vanilla extract, orange zest and lemon zest.   
  3. Pour the milk mixture into the flour mixture and whisk until a smooth batter forms, then slowly whisk in the melted butter.   
  4. Transfer the batter back into the jug and pour some of it into your pre-heated waffle maker. Once the waffles are cooked, transfer to a cooling rack and repeat with the rest of the batter until it’s all used up.   
  5. Top your waffles to taste with your favourite fresh fruit, sultanas, yoghurt, maple syrup and nuts.
