Homemade Maple Pistachio, Ginger and Turmeric Granola

Ingredients

  • 3 cups rolled oats
  • ¼ cup toasted almond flakes 
  • ¼ cup chopped pistachio
  • 1/2 cup dark maple syrup
  • 1/3 cup melted coconut oil
  • 1 tsp ground turmeric
  • 2 tbsp chopped stem ginger

Method

  1. Preheat the oven to 170C / 340F and line a baking tray with parchment paper.
  2. Put all dry ingredients in a large mixing bowl.
  3. Pour the maple syrup and melted coconut oil into a bowl and stir until all ingredients are coated.
  4. Spread the granola mixture onto a baking tray in an even layer.
  5. Use the back of a wooden spoon to lightly press the mixture.
  6. Bake for 20 minutes.
  7. Stir the granola carefully then bake for a further 5-10 minutes.
