
Homemade Maple Pistachio, Ginger and Turmeric Granola

Ingredients
- 3 cups (270) rolled oats
- ¼ cup (40gr) toasted almond flakes
- ¼ cup (40gr) chopped pistachio
- 1/2 cup (170gr) dark maple syrup
- 1/3 cup (70gr) melted coconut oil
- 1tsp ground turmeric
- 2tbsp chopped stem ginger
Method
- Preheat the oven to 170C / 340F and line a baking tray with parchment paper.
- Put all dry ingredients in a large mixing bowl.
- Pour the maple syrup and melted coconut oil into a bowl and stir until all ingredients are coated.
- Spread the granola mixture onto a baking tray in an even layer.
- Use the back of a wooden spoon to lightly press the mixture.
- Bake for 20 minutes.
- Stir the granola carefully then bake for a further 5-10 minutes.
