
Crunchy Maple Asian Inspired Salad with a Miso Dressing

Ingredients
Salad
- 2 cups kale
- 2 cups shredded green cabbage
- ½ cup diced cucumber
- ½ cup shredded carrots
- ½ cup thinly sliced mixed colour bell peppers
- ¼ cup thinly sliced spring onions
- 1 cup coarsely chopped cashews
Maple and Miso dressing
- 2 tsp miso paste
- ½ tsp grated ginger
- 4 tbsp olive oil
- 1 tbsp sesame oil
- 1 tbsp rice wine vinegar
- 2 tbsp soy sauce
- ½ lime juice
- 2 tbsp maple syrup
Method
- Add in a bowl the olive oil, soy sauce, sesame oil, rice wine vinegar, lime juice and maple syrup.
- Add the miso paste, finely grate in the ginger and whisk until well combined and there are no clumps. You can also use a blender.
- Shake the dressing when you are ready to serve to combine again if separated. Drizzle on the salad about ¾ of it. Toss with the slaw and add ¾ cup of the cashews. Add remaining dressing if needed. Garnish with remaining ¼ cup cashews.
