
Cold Maple Soba Noodles with Salmon

Ingredients
Ingredients for the salmon fillets and vegetables:
- ½ cup soy sauce
- 1/3 cup dark maple syrup
- 1 tbsp gochujang paste
- 1 tbsp fresh grated ginger
- 2 crushed garlic cloves
- 2 salmon fillets
- 2 tbsp olive oil
- 1 courgette sliced in ribbons
- 1 cooked broccoli cut into florets
- salt and pepper
Ingredients for the noodles:
- 1 pack soba noodles
- 1/4 cup soy sauce
- 1 tsp tahini
- 1 tbsp toasted sesame oil
- 1 tsp grated ginger
- 1 tsp chilli flakes
- 2 finely sliced spring onions
- 1 tbsp toasted sesame seeds
Method
- Preheat your oven to 180c.
- In a baking dish, mix the soy sauce, maple syrup, Gochujang, grated ginger, garlic and salmon fillets then set aside.
Make the noodles:
- Bring a large pan of water to a boil, scoop out ¼ cup hot water for later.
- Cook the noodles according to package directions then drain.
- Mix the soy sauce, tahini, sesame oil, ginger, chilli flakes and the ¼ cup hot water in a bowl then add to the noodles.
- Cool the noodles in the fridge for one hour.
For the salmon:
- Cook the salmon in the oven for 10/15 minutes.
- Change the oven setting in grill.
- Grill the salmon fillets until crisping on top and the sauce is thickening; it should take no more than 3 minutes.
- Put the noodles into 2 plates then top with salmon and the sauce, cooked broccoli, courgette ribbons, spring onions and sesame seeds.
- Drizzle more maple and serve.
