Cold Maple Soba Noodles with Salmon

Maple Soba Noodles with Salmon

Ingredients

Ingredients for the salmon fillets and vegetables:

  • ½ cup soy sauce
  • 1/3 cup dark maple syrup
  • 1 tbsp gochujang paste
  • 1 tbsp fresh grated ginger
  • 2 crushed garlic cloves
  • 2 salmon fillets
  • 2 tbsp olive oil
  • 1 courgette sliced in ribbons
  • 1 cooked broccoli cut into florets
  • salt and pepper

Ingredients for the noodles:

  • 1 pack soba noodles
  • 1/4 cup soy sauce
  • 1 tsp tahini
  • 1 tbsp toasted sesame oil
  • 1 tsp grated ginger
  • 1 tsp chilli flakes
  • 2 finely sliced spring onions
  • 1 tbsp toasted sesame seeds

Method

  1. Preheat your oven to 180c.
  2. In a baking dish, mix the soy sauce, maple syrup, Gochujang, grated ginger, garlic and salmon fillets then set aside.

Make the noodles:

  1. Bring a large pan of water to a boil, scoop out ¼ cup hot water for later.
  2. Cook the noodles according to package directions then drain.
  3. Mix the soy sauce, tahini, sesame oil, ginger, chilli flakes and the ¼ cup hot water in a bowl then add to the noodles.
  4. Cool the noodles in the fridge for one hour.

For the salmon:

  1. Cook the salmon in the oven for 10/15 minutes.
  2. Change the oven setting in grill.
  3. Grill the salmon fillets until crisping on top and the sauce is thickening; it should take no more than 3 minutes.
  4. Put the noodles into 2 plates then top with salmon and the sauce, cooked broccoli, courgette ribbons, spring onions and sesame seeds.
  5. Drizzle more maple and serve.
