Ingredients

  • 4 vegan biscuit cookies (e.g. digestives), crushed
  • 2 tbsp melted coconut oil
  • 2 tbsp pure Canadian maple syrup
  • 1 1/2 cups dairy-free Greek yoghurt
  • 1/2 cup vegan vanilla protein powder
  • 1/4 cup pure Canadian maple syrup

Method

  1. Mix crushed biscuits + coconut oil, press into silicone muffin moulds. Reserve some for sprinkling on top later.
  2. Cheesecake filling: Stir yoghurt, protein powder + maple until smooth.
  3. Spoon over bases, smooth tops.
  4. Sprinkle the reserved biscuits on top.
  5. Chill for at least 3 hrs until set.
  6. Pop the cheesecakes out from the mould and serve.

Storage tips: in an airtight container in the fridge for up to 3 days or in the freezer for months, allowing it to thaw at room temp for 5-10 mins before serving.
