Ingredients
- 4 vegan biscuit cookies (e.g. digestives), crushed
- 2 tbsp melted coconut oil
- 2 tbsp pure Canadian maple syrup
- 1 1/2 cups dairy-free Greek yoghurt
- 1/2 cup vegan vanilla protein powder
- 1/4 cup pure Canadian maple syrup
Method
- Mix crushed biscuits + coconut oil, press into silicone muffin moulds. Reserve some for sprinkling on top later.
- Cheesecake filling: Stir yoghurt, protein powder + maple until smooth.
- Spoon over bases, smooth tops.
- Sprinkle the reserved biscuits on top.
- Chill for at least 3 hrs until set.
- Pop the cheesecakes out from the mould and serve.
