Roast Chook and Maple Caesar Salad

Ingredients
For the Caesar dressing:
- ¼ cup mayonnaise
- ¼ cup buttermilk
- 3 tbsp pure maple syrup (preferably amber syrup for its rich taste)
- 3 tbsp Parmesan cheese, grated
- 1 garlic clove, grated
- ½ tsp ground cayenne pepper
- Squeeze of fresh lemon juice
- 2 tsp Dijon mustard
- 1 tsp Worcestershire sauce
- Salt and black pepper, to taste
For the salad:
- 1 fresh roast chook
- 2 Romaine lettuces
- 1 cup croutons
- 3 tbsp Parmesan cheese, grated
Method
- Add all the dressing ingredients to a bowl and whisk until combined.
- Use your hands to take the roast chook off the bones and shred.
- Place the lettuce, croutons, half the parmesan, chook and dressing into a large bowl and toss to combine.
- Top with the remaining parmesan and serve.
