  • 4 Moreton Bay bugs
  • 3 garlic cloves
  • 1 cup soft salted butter
  • 3 tbsp pure maple syrup (preferably amber for its rich taste
  • 3 tbsp finely chopped flat-leaf parsley

To garnish

  • 4 lemon wedges
  • Pinch of sea salt

Method

  1. Preheat oven to 220C.
  2. Mash garlic to a paste then stir together with maple syrup, soft butter and parsley.
  3. Boil the Moreton Bay bugs in salted water and cook for 5 minutes.
  4. Transfer with tongs to a plate and place in ice cold water.
  5. Split the bay bugs lengthwise and discard innards.
  6. Spread roughly 1 tablespoon of maple garlic butter on top of each bug, then cook in the oven for 7 minutes.
  7. Serve immediately and enjoy.
