Filling
- 3½ cups frozen mixed berries
- 1/4 cup pure Canadian maple syrup
- 1 tbsp fresh lemon juice
- 1/4 cup cornstarch
Crumble
- 1 cup plain all-purpose flour
- 1/4 tsp cinnamon
- ½ tsp salt
- ¼ cup pure Canadian maple syrup
- ¼ cup plant-based butter, softened
To serve
- Vanilla ice-cream
Method
- Preheat oven to 180°C. Grease and set aside a square baking dish.
- Add the berries, maple syrup, lemon juice and cornstarch into a large mixing bowl and toss well until all of the berries are evenly coated. Pour into a large baking dish.
- For the crumble, add the flour, sugar, cinnamon and salt into a large bowl and mix well. Add in the maple syrup and softened butter and use clean hands to rub together until it forms a crumbly mixture.
- Evenly sprinkle the crumble over the top of the berry mix to cover the surface.
- Bake in the oven for 40 minutes or until berries are bubbling and crumble becomes golden.
- Remove from the oven and allow to cool before serving.
