Maple Prawn Tacos

Ingredients
For the Prawns
- 440 g raw prawn cutlets
- 2–3 minced garlic cloves
- 1 tbsp maple syrup
- 2 tbsp olive oil
- 1–2 tsp paprika
- pinch of sea salt
- 1 tsp pepper
- ½ tsp cumin
- sprinkle of chilli flakes
- a lime
for the slaw
- ⅓ of a red cabbage, shredded
- ½ red onion, chopped
- ½ a lime
for the Coriander lime sauce
- handful of coriander, loosely packed
- ⅓ cup Greek yogurt
- 1 lime
- 2 cloves garlic
Other ingredients
- avocado
- sprinkle of sea salt
- chopped tomato
- extra coriander for garnish
Method
- Combine all dressing ingredients and pour directly over the cooked prawns, tossing gently to coat evenly.
- On low- medium heat, drizzle olive oil into the frypan.
- Add the prawns to the pan and sauté for 2-3 minutes on each side or until pink.
- Remove prawns from the pan.
- Drizzle the remaining dressing from the saucepan over the prawns.

- Toast the tortilla for 2 minutes on each side.
coriander lime sauce
- Blend the ingredients for the coriander lime sauce until thick and smooth.
Assembly
- Begin assembling the taco. Add the prawns and drizzle over the sauce. Enjoy!
