Maple Banana Bread Bites

Ingredients

For the Banana Bread Bites

  • 1 ripe banana
  • 3 tbsp peanut butter
  • 1-2 tbsp maple syrup
  • 1 tbsp coconut oil
  • ½ cup almond meal
  • ½ cup oat flour
  • ⅓ cup rolled oats

For the chocolate coating

  • 130 g dark chocolate
  • 1–2 tbsp coconut oil

Method

  1. Mash the banana in a bowl.
  2. Combine all the wet ingredients into the bowl and mix well.
  3. Mix in the dry ingredients with the wet mixture.
  4. Scoop the mixture and roll into balls.
  5. Transfer the maple bites to the freezer to chill for 15 minutes.

Chocolate coating

  1. Using a fork, coat each maple bite in the melted chocolate and sprinkle some sea salt.

Assembly

  1. Once all the bites have been coated, transfer to the freezer for 1 hour.
  2. Thaw for 5 minutes before serving and enjoy.
