Ingredients
For the dates
- 20 dates
- 1 cup peanut butter
- 1 tbsp maple syrup
- 4.2 oz dark chocolate
- crushed freeze-dried strawberries (to decorate)
For the raspberry filling
- 1 cup raspberries
- 1 tbsp maple syrup
- 1-2 tbsp chia seeds
Method
- Gently heat the raspberries, maple syrup, and chia seeds over low to medium heat until they reach a thick consistency.
- Let the raspberry filling cool completely. Line a tray and press your dates into a pan, cover with parchment paper, and press down firmly using a cup.
- In a bowl, mix the peanut butter and maple syrup. Spread the peanut butter mixture evenly over the dates.
- Add the raspberry filling to the date bark and spread evenly.
- Melt the dark chocolate and coconut oil, and drizzle it all over the date bark.
- Top with crushed freezedried strawberries and refrigerate or freeze for 20-25 minutes.
- Slice it up and enjoy!
